Falastin: A Cookbook

Review by: Molly Briguglio

The Short:

Established chef and restauranteur Yotam Ottolenghi and co-authors Sami Tamimi and Tara Wigley bring to life over 120 recipes of Palestinian cooking made easy for the modern kitchen.

The Long:

Ottolenghi, Tamimi, and Wigley take readers on a journey through Bethlehem, Jerusalem, Nablus, and more through recipes and stories from Palestinians. Each region carries with it different flavors and cuisines that truly give readers a proper understanding of the Palestinian culture and the roots of its dishes. Ottolenghi shares anecdotes of his own experiences as a Palestinian and how they have shaped his path with cooking.

To read or not to read:

Read! This cookbook is an interactive experience. The recipes are authentic yet doable and the stories are a gateway into unique perspectives that provide a voice for the Palestinians. Paired with remarkable photography, this cookbook is a must read.
